Monday Monday… SO Good to Me!

Tonight’s super fast dinner was delicious!  I can’t believe I peeled & de-veined two pounds of shrimp on a Monday night.

To my big bowl of freshly cleaned shrimp, I added salt & pepper, (fresh cracked!) cayenne, basil, (the little frozen cubes) and lots of fresh squeezed lime juice.

*SIDENOTE* (I only used lime because I couldn’t find my lemon juice,

and I had limes left from my guacamole-making this weekend.

It was a serendipitous loss, ’cause lime and shrimp are very good bed fellows!!)

I made some angel hair pasta, and seasoned it with a generous amount of olive oil & butter, minced garlic, salt & pepper, cayenne, basil, and of course, a little extra lime juice.

THEN, I melted a stick of butter and added a heaping helping of garlic to that warm sautee pan.  In that delicious smelling butter, I threw in my marinating shrimp.  Once it was cooked thoroughly, I took it to the dinner table.  I put the beautiful pasta in a lovely bowl given to me by my Aunt Lue!

I don’t know what compels me to cook so much lately, but it’s a blast!

This was beyond simple, yet gourmet delicious.  And super fast.  Monday night, you are my friend 🙂
